Tanks own in RA, but before you have tanks you have to manage with using infantry only. Also later when you rush or fight with tanks infantry still has an important role to play.
Depending on a map and type of soldiers it variates how many of them you can make. On unlimited ore map (e.g. P4, darasta, wide etc.) I usually make riffle soldiers until third war, on gem maps (HJK6, Ribbon etc.) I make until second war and on ore maps such as Union Break, Ribbon Wid Ore or Path I usually make 10 guys max. Riffles are the cheapest so if you making grenades or especially bazookas you should always keep an eye on your money to make sure you wont go broke.
Riffles are my favorite for couple of reasons: You only need one barracks to make them max speed, they are the cheapest so you get them the most and they are better than naiders with rushing with tanks or defending vs. tanks.
The main reason why people often make naiders, is to defend vs. opponent's naiders. This is a solid strategy but it has couple of weaknesses, making 2 barracks means that enemy who makes one barracks and is as quick as you will have first tanks out before you. Also if you are trying to kill him with naiders and fail, he will still have some riffles left for rush/tank fight.
With little practice you will be able to defend vs. naiders by using one barracks and making riffles only. The secret is to make riffles nonstop and send them behind your old guards. In the end opponents last naiders might be very close to your base, but you will still have riffles between your buildings and last of enemy naiders. Also as soon as you get your first tank you can use it for squishing (alt+left click enemy men = squish). When you rush with tanks you should always take your riffles with you, In early rush they are as important as tanks. I always have my tanks in group 1 and riffles in group 2.
Bazookas can be good for defending vs tank rush. However bazookas suck against riffles so if opponent brings his 100 riffles when he rushes your bazookas get pwned in no time. You need 2 barracks to make them fast and you need to make extra truck to not go broke fast. That's why bazookas are mostly used by chickens, who are scared of first rush. However bazookas are by far the best anti-air defense there is.
Engineers are the reason I usually never sell my barracks. Even though you need 4 barracks to make them max speed, they are often a life saver even with one. Later in game you can use engineers for taking over enemy buildings.
